HOW TO PREPARE PIE





 

 Ingredients and preparation
1. Flour 1.5 kg
2. Vegetable fat
3. Salt, not too much.
4. Potatoes 1 kg
5. Beef or chicken 1.5 kg
6. Seasoning be it BBQ or chicken of steak and chops or any stock.
7. Salt a tea spoon
8. Mixed fresh peppers and onions.
Method;
1. Place four in to a bowl and about 2 cups water. Mix the four with hand and when completely mixed and hard enough. Start to need your dough with your knuckles until it becomes smooth.
2. Use a smooth surface clean it, sprinkle some four and place tour dough there then start to roll it, do not press it too much and spread it in a square shape.
3. Get your fat and pierce it to the dough all over the surface of your rolled dough.
4. Fold it to meet in between then splash flour roll again using a rolling pin or smooth bottle.
5. Pierce it again with fat and fold it again half way then turn it. Sprinkle the flour on the surface and on top of the dough, roll it and again fold,turn and roll it.
You can fold it as many times as you want depending with the layers you want then fold nicely place on the plate in put the fridge for it to set.
Preparation of the filling
1. Clean your peppers and onions then cut in to small cubes.
2. Peel your potatoes and dice them. Then wash them and blanch them or steam in salty water.
3. Cut your meat be it beef or chicken in cubes small cubes, cook it until water finish, fry it a bit don't turn it brown, add your fresh onions and peppers then mix very gently not to crush the meat, then add you steamed potatoes and either of the spices I mentioned on top and mix gently.
4. Add a little bit of water not forgetting salt even chilly if desired, you can use thickener if you want but I prefer using mushroom soup powder or cheese and bacon.
5. Reduce the heat, cover it and give it time to some until water disappear remaining wet and not too dry.
6. Place your filling in a bowl so that it cools for some minutes.
After that go back to your put pastry place it on the surface and roll it the you can use a side plate to cut round shapes or a mug cup depending with the size of a pie you want.
After cutting remove the cut endings and remaining with the shape u want to use, start placing the filling there using a spoon not too much but enough so that you have room to help you fold your pie properly.
When you are done. Get a baking try and grease it sprinkle some flour then place your finished shaped pies there.
Break an egg in a cup bit it and get a brush for pastry then egg wash your pies.
5. Turn on your oven about 200 degrees then place your baking try there. Bake your pies to the colour you desire then remove them and server.
It is a long process but easy to follow.
